30 Minute World Class Mushroom French Dip

30 Minute World Class Mushroom French Dip

Ingredients

  • 3 tablespoons olive oil (extra-virgin)
  • 1 medium white onion, thinly sliced
  • 2 cloves garlic, diced fine
  • 4 large portobello mushroom caps, cut into 1/4-inch-thick slices
  • 12 ounces shiitake mushrooms, trimmed and coarsely chopped
  • 1 tablespoon mustard of choice, my preference is Spicy Dijon
  • 1 tablespoon fine chopped fresh thyme
  • 1 ½ cups low-sodium vegetable broth
  • 4 small hoagie rolls (whole-wheat), halved lengthwise
  • 4 slices cheese, my preference is provolone

Starting Off

Heat 1 tablespoon oil in a large cast-iron skillet on high heat. Add the white onion and cook, making sure to stir frequently until lightly browned (about 3 to 4 minutes). Then add the garlic and cook until fragrant, this should take about 1 minute. Transfer to a medium bowl.

Add 1 tablespoon of oil to the pan. Then add the portobellos and cook, stirring semi frequently, until browned (5 to 6 minutes). Also transfer this to the bowl containing the garlic and onion. Finally add the remaining tablespoon of oil and shiitake mushrooms to the pan. Cook this stirring frequently as your skillet will be hot. These should be browned in about 5 to 6 minutes. Then return the portobellos and onion to the pan. At witch point you can stir in mustard and thyme. Allow this to cook for about two minutes. At witch point you can stir in broth, and allow it to simmer for 5 minutes. While waiting for this to simmer you can preheat your broiler on the high setting.

Preparing the Sandwich Roll

Scoop out the majority of the inside to the rolls (you can keep this for other recipes such as breadcrumbs). Position the rolls with the cut-side up into your broiler. Its time to grab your mushroom mixture. With a slotted spoon allow the broth to drip off before dividing the mixture evenly across the bottom portions to the rolls and top with the cheese of choice. Once your mixture has all been placed, you can transfer the broth to a ramekin to dip the roll in.

Almost ready to eat

You will want to broil the sandwich until the cheese is bubbly or the bred is just brown enough for your liking. If the cheese is not bubbly when you remove the sandwich it will continue to cook outside of the broiler. This normally takes my broiler about 1 to 2 minutes. Now you can place the top halves of the rolls on the sandwiches and serve with the sauce.
